In the hills of Guerrero, barbacoa is more than food — it's Sunday morning, family, fire and patience. We bring that same fire to Los Angeles every Tuesday: meat seasoned simply, wrapped in maguey leaves, and steamed for hours until it falls apart at the touch of a tortilla.
No shortcuts. No fillers. Just the way it's done back home.
